Oaxaca Restaurants
The food of Oaxaca is the best that I have eaten anywhere. The moles which have simmered for hours bring the taste of spice and earth, a mouth-warming delight. Soups look so simple, yet are amazingly complex. Tamales and tortillas and guacamole, smokey mescal, oh and the cheese. The freshest eggs I’ve ever had, chiles, and tomatoes and dark rich coffee. Here are my recommendations: El Alquimista- This restaurant isn’t in Oaxaca City, but along the coast of Oaxaca State, and has some of the very best food that I ate in all of Oaxaca, so I wanted to include it here. Plus, if you are going to the…

The Osa Peninsula, Corcovado National Park
The Osa Peninsula was one of the most astounding places that I’ve ever visited. With its misty beaches, its abundant wildlife, and remote location, I truly felt like I had come to the ends of the Earth. I stayed at the La Leona Ecolodge and being right on the beach, it was wonderful to hear the ocean waves every night. The rooms here are tent cabins. They have enclosed tropical garden bathrooms. It was lovely to shower beneath a palm tree. There is no electricity in the rooms, nor internet connection which made it feel like a true escape. I highly recommend getting the meal package as the food at…

Costa Rica
I loved the diversity of Costa Rica when I traveled there. In just two weeks I got to have so many different kinds of experiences and see so many different types of things. I got to relax on a deserted beach that was on the edge of a rainforest. Truly there was nothing like lying on the beach and having scarlet macaws fly over and monkeys playing in the trees behind me. Hiking through the rainforest was breathtaking with its huge blue butterflies flying by, poison dart frogs, bats, anteaters, sloths, and the unusual coati, which was an animal I didn’t even know existed before my Costa Rican trip. The…

Beach Wisdom
1. Be careful where you hang your sarong. Otherwise you just might find yourself chasing it down the beach flashlight in hand at 2 AM. 2. Study the hermit crabs. They are fascinating. Of course, the best time for this is 2am flashlight in hand. 3. You can always get more people on the boat than you think. Really. 4. When watching the sunset try to view what’s really happening. Imagine rolling back on the earth instead of seeing the sun sink. It is we that are moving. Not the sun. 5. Have sand stuck to some part of your body at all times. This won’t be hard. 6. Let…

Castaway Resort, Koh Lipe Thailand-A True Tropical Hideway
There are some places that you journey to, and once you arrive there, you realize that your whole journey and even your whole life was leading you there. This is the place you didn’t know you were looking for, the place that was calling your name, the reason why you journeyed down bumpy roads and across oceans to get to. When I arrived at Castaway Resort, I knew that I had found such a place. I try to look for the out of the way places on this earth, and when I first read about Koh Lipe Island, I was intrigued. When I started searching on the internet and saw…
