Oaxaca Restaurants
The food of Oaxaca is the best that I have eaten anywhere. The moles which have simmered for hours bring the taste of spice and earth, a mouth-warming delight. Soups look so simple, yet are amazingly complex. Tamales and tortillas and guacamole, smokey mescal, oh and the cheese. The freshest eggs I’ve ever had, chiles, and tomatoes and dark rich coffee. The Osa Peninsula, Corcovado National Park
The Osa Peninsula was one of the most astounding places that I’ve ever visited. With its misty beaches, its abundant wildlife, and remote location, I truly felt like I had come to the ends of the Earth. I stayed at the La Leona Ecolodge and being right on the beach, it was wonderful to hear the ocean waves every night. The rooms here are tent cabins. They have enclosed tropical garden bathrooms. It was lovely to shower beneath a palm tree. There is no electricity in the rooms, nor internet connection which made it feel like a true escape. Costa Rica
I loved the diversity of Costa Rica when I traveled there. In just two weeks I got to have so many different kinds of experiences and see so many different types of things. I got to relax on a deserted beach that was on the edge of a rainforest. Truly there was nothing like lying on the beach and having scarlet macaws fly over and monkeys playing in the trees behind me. Hiking through the rainforest was breathtaking with its huge blue butterflies flying by, poison dart frogs, bats, anteaters, sloths, and the unusual coati, which was an animal I didn’t even know existed before my Costa Rican trip.
